Arabica from Sigri Estate (Papua New Guinea)

Established with seedlings from Jamaica’s Blue Mountains, the Sigri estate has become the premier producer of quality coffee in New Guinea’s Waghi Valley. This coffee is smooth and sweet in the cup, with medium body and just a touch of bright acidity to highlight the fruit.

Santos Guaxupe (Brazil)

This is a lower grown bean, and as such, doesn’t have the crisp acidity associated with denser beans. It does have a medium-toned acidity that’s somewhat reminiscent of tobacco/spice on first taste, but gives way to more caramelly notes. This is definitely a sweet bean, and makes a good base for espresso.

Altura Zaragoza (Mexico)

With some of the largest beans, this often overlooked coffee produces a very beautiful roast. This coffee has a medium acidity and a sweet, smooth body, with just a hint of roasted hazelnuts. Our Mexican Altura runs a close second with Holombian as an excellent morning brew.

Genuine Antigua Volcanes (Guatemala)

A high altitude, strictly hard bean. This award winning mountain/shade grown coffee is legendary in flavor with perfect balance. Some actually state that if they had but one coffee, this would be it. Volcanic soil gives moderately acidic, mild, smooth, aroma. Moderate in flavor with some chocolate notes.

Grown on more than 5000 small and medium sized farms with a high percentage of natural shade and soil of high clay content. A mellow full-bodied flavor with a sweet aftertaste.

Most of the coffee gathered is still from wild trees giving this coffee a truly exotic flavor with a pleasant acidity, a thick rich body and an earthy complex aroma. This coffee is the most distinctive in the world characterized by a a thick rich body, a winy acidity and an intense floral aroma of cinnamon and sweet strawberries.

Affogato

 

Ingredients (serves 4)

  • 500g good-quality vanilla ice-cream
  • 120ml Italian liqueur (such as amaretto )
  • 4 espresso cups freshly brewed strong, black coffee

Method

Scoop ice-cream into 4 chilled bowls or cups, pour 30ml of liqueur over each. Top with hot coffee and serve immediately.

Vienna coffee

Ingredients (serves 1)

  • 3 single shots (90ml) hot espresso coffee
  • 3/4 cup boiling water
  • whipped cream and cocoa powder, to serve

Method

1.      Pour coffee into a heatproof glass. Stir in boiling water. Spoon cream over top. Dust with cocoa powder. Serve.

Irish coffee

Invented by a barmen after the Second World War, this is prepared in a large, stem glass and consists of 2/3 very hot black coffee sweetened with brown sugar and 1/3 Irish whiskey. It is topped with thick cream poured carefully over the back of a spoon so that it floats on the surface.
